Because nothing says “keto” like subbing cauliflower for potatoes!
I miss my Nana’s potato salad more than I can say. When I feel deprived, I’m more likely to make bad food choices, so I decided to figure try swapping cauliflower for potatoes. The best endorsement I’ve received: Nana herself loves my version of her potato salad!

- 2 medium heads cauliflower cut into florets and steamed (I cook for 1 minute in the Instant pot) and chilled
- 2 hard-boiled eggs
- 3 stalks celery, diced
- 3 T dill relish
- 4 T chopped green onion
- 6 T mayo
- 2 t mustard
- Salt
- Pepper
Mix all ingredients together and refrigerate for at least an hour.
