We're camping this week and I've planned our meals and snacks so we can keep it keto. I'll try to post as we go along this week. I took lots of food pictures last time we camped but never got around to actually posting.

Since I've been preparing for the Dogwood Pedal, I haven't been cooking much. But I want to share that I rode 20 miles!
When I'm in a hurry I make it in the air fryer, but I actually prefer broccoli roasted in the oven.
Hard boiled eggs have become a staple at our house. We cook a batch at least once a week. The Instant Pot makes it super easy to get eggs the way we like them that peel beautifully (most of the time! eggs are sometimes just difficult).
UPDATE! "A cry for help" might be more accurate! I got my new silicone pan and gave the Kentucky Butter Cake another try. It came out a little better, but definitely not beautifully. I am determined to get this right! So there's more cake in our future.

I really, really, really love this shrimp dish! It was a hit with the husband and with my sous vide class this past Saturday.
Steak is a big deal in my family. I'm pretty sure my dad would have disowned me if I had ever requested a well-done steak. My brother brought steak sauce into my house recently and I took it as an insult. I absolutely LOVE the precision of cooking a steak medium rare from edge to edge and serving it with confidence.
Amazingly quick, super easy, delicious, and a good fat (hello, keto friends)! Salmon is definitely one of my favorite things to cook sous vide.
